Abuelas Sofrito

The base of most Spanish meals I cook start with my Abuelas Sofrito.  I may make a large batch of this and store it in the fridge so I always have it on hand.  I add it to my beans, yellow rice, most meats that I roast in the oven.  It is fairly simple to make an brings lots of flavor to any dish.

Ingredients:
3 bulbs of Garlic (peeled)
2 large Spanish Onions (peeled and chopped)
1 bushel of Cilantro cleaned and chopped)
3 Bell Peppers (seeded and stemmed)
1 bushel Culantro (cleaned and chopped)
15 Aji dulce (seeded and Stemmed)

 

Place all ingredients into the blender.
Blend until fully blended. I add a little water or white Vinegar to get it going.

This is a staple item In my fridge.
